Yummy biscuits for wintery days

Soft Amaretti

Time: 25 minutes

Makes: 24

INGREDIENTS

• 90g Egg white (approx. 3 large eggs) or use pasteurised available in supermarkets
• 200g Caster sugar
• 125g Ground almonds
• 1 tsp Almond Extract
• Icing sugar for rolling

METHOD

1. Preheat oven to 150C Fan
2. Line two baking trays with non stick paper
3. In a very clean bowl whisk egg whites to soft peaks
4. Fold in Caster sugar, almonds and extract until completely combines.
5. Roll the mixture into 24 walnut size balls then roll in some icing sugar.
6. Place on baking sheets allowing room to spread, I like to sieve a little extra icing sugar over them once on the trays.
7. Bake in preheated oven for approximately 20 – 25 minutes until the tops are cracked and bottoms are lightly golden.
8. Remove from oven and allow to cool.  Keep in an airtight container.
